Intimate 5* Safari Lodge (10 guests maximum) close to Hoedspruit is looking for a Senior Chef / Kitchen Manager. This boutique safari lodge prides itself on offering a superior culinary experience at every meal.The primary function of each role is to ensure that all our guests receive world-class service, award-winning cuisine, and memorable experiences.The incumbent must be creative, enthusiastic and have desire to try new things and experiment with the latest techniques and ingredients, this must be someone that inspires in the kitchen, someone that can work independently and but can also be part of a team.In addition to the primary functions of an experienced chef, the Kitchen Manager role will include driving of menu development, closely controlling costs and managing stock, initiating creative development and constantly driving for results.It is expected that the candidate can design and deliver all aspects of a 7-course menu (to a small audience), with everything from menu design to plating consistently perfect.Requirements:At least 5 years chef experience at a 5* establishmentCertification of professional trainingCertification of food safe trainingSupervisory experience is beneficial.Valid Driver's License (advantageous)Fine dining and creative platingSeasonal produceCost and stock control systemsBraai servicePackage on offer:R8-14K NEG (DOE)Newly built accommodation, room with on suite bathroom.3 meals per dayFlexible on the rotation; the candidate can decide to be on a 3-week on / 1-week off or 6-week on / 2-week off rotation.No other extra benefits included
