in food preparation (Qualifications specialised in pastry an advantage)
Must be able to produce a portfolio of work within pastry (attach images of your best pastry work to your application)
Proven knowledge in specialist areas of pastry, confectionary and icing
High attention to detail
To maintain and upkeep the high standard of food preparation in all outlets of the Hotel, ensuring 5* standards and fresh produce is used at all times
Able to manage stock, budgets and manage/ train staff
Oversee all pastries prepared and ensure all items up to standard, as well as oversee pastry operations in the kitchen
Make recommendations for speciality menus and recipes for product offerings within
the hotels, restaurants and for banqueting functions.
Review the menus and recipes for speciality product and service offerings in
line with trends in the industry ensuring that the SI offering is innovative and fresh
Compile and co-ordinate any speciality promotions or projects across the property
Provide feedback to Culinary Management Team
Provide support and relevant, cost-effective solutions to challenges being experienced
