Kitchen Manager Pirates Group of Restaurants is looking for a Kitchen Manager for their latest addition, Havana Nights. The applicant must have a formal culinary diploma and preferably 3 years experience in an A la Carte restaurant.
Requirements:
SA Citizen
Matric qualification
Formal culinary/cooking diploma
Must be able to provide recent written and contactable references
Strong leadership qualities, being able to manage a few line cooks and cleaners
Passion for cooking, and happy trying new recipes as requested by the owner
Strong in stock management, stock takes and orders
This is predominantly night work and long hours apply when necessary
Strong focus on attention to detail
Be a team player prepared to do any restaurant manager duty requested of you.
Live in Plumstead or surrounding area as you are responsible for your own cost of travel to and from work
Fluent in English, and well-spoken
Tasks - Including but not limited to the following:
Ensure all sections are prepped, clean and prepare ingredients as required
Cooking of meals
Managing the kitchen during shift
Recording of wastage
Train and manage kitchen staff and cleaners
Ensure fridges are at correct temperatures
Deal with guests' complaints/enquiries. Guests must always leave happy
Maintain food costs through wastage control, purchasing, storing, portion control
Assist the owner developing kitchen protocol, recipe portions and methods
Ensure the food is according to standard before sending it out to the guest
At all times maintain cleanliness in the entire venue, especially the kitchen
Report any faulty equipment to the owner and follow up to ensure it is resolved
Maintain the Health and Safety procedures to be implemented and followed.
Position: Full-time
Basic Salary: Depending on experience, with stock bonus and turnover incentives
