Wedding and conference venue with restaurant requires an energetic F&B Manager with good chef experience to manage all aspects of kitchen, restaurant and bar areas. This position would be best suited for a candidate that is or was a chef but has moved more into managing than actually doing all the food prep themselves. They will be expected to run the kitchen as well as the restaurant and they will be responsible for stock control, dealing with suppliers, dealing with guests etc.
We need applicants:
To be able to plan and regularly design new innovative menus.
Capable of menu costing and maintaining GPs.
A good motivator and capable of staff training.
Liaise with customers.
Experience in up-market A la Carte and Buffet catering.
Driving licence and own transport is essential.
Live on property in a one bedroomed unit.
Hospitality related qualification preferable.
At least 5 years experience as a Head Chef/ Food and Beverage Operations Manager at a 4 star establishment.
Good track record.
Computer literate - working knowledge of computer based hotel management systems, MS Office, Excel and Word.
Good financial understanding including control of food costs.
Able to work flexible hours as per operational requirements.
Strong technical knowledge relating to food and beverage.
Highly motivated, independent and a good decision maker.
Strong communication skills.
Ability to maintain control of the department with ease.
Well presented, honest, enthusiastic and professional.
Ability to motivate and inspire team towards the lodge's goals.
