Job Description
Overall management of a kitchen brigade
Maintenance of effective control systems and procedures
Management and improvement of staff productivity
Drafting and implementation of departmental strategies, profit improvement plans and promotions
Extensive menu planning and costing
Knowledge and implementation of operational standards and procedures
Effective management of Operating Equipment
Managing and improving staff productivity
Overseeing relevant Stock takes and Monitoring of stock rotation
Attending all management meetings
Time and attendance monitoring.
Maintaining sound financial controls
Culinary Arts Qualification
6 Years Chef experience and 3 Years Sous Chef experience
Passion for food and cooking
Experience of stock control and food portioning
Experience in stock taking
Hands on approach
Sensitive to cultural issues/patient with team members
Ability to share ideas/new recipes with colleagues and train them
Good social and interpersonal skills
Effective menu planning
Sense of ownership and pride for the guest experience
Good eye for detail
Ability to work long, flexible hours
Flexible attitude and willing to take on tasks as necessary
Able to interact with guests and behave appropriately
Ability to plan and organize
Knowledge of good kitchen hygiene practice
Well groomed and a good sense of personal hygiene
