Details of the offer

Manage bakery targets and profitability:
Overall bakery expenses are maintained within budget
Ensure stock takes are completed accurately every Monday morning for raw materials and manufactured goods
Implement stock take procedures for expense items and maintain expense items within the budget
Ensure costing are up to date and accurate
Verify deliveries against order placed
Calculate weekly returns and identify problems areas and opportunities to improve the profitability of a bakery
Control Stock:
Implement production chain system of all stock in the bakery to optimize shelf life
Set correct range to be available at the correct time of day/week
Ensure stock transfers are accurately recorded on a daily basis
Ensure consistent quality in freshness and presentation
Ensure scales are correctly calibrated and products and prices are accurately maintained
Design in house bakery promotions
Develop new value added lines for the bakery
Order correct quantities of products by maintaining ideal stock levels during different trading periods
Point of Sales and Pricing:
Spot check bakery price tickets on display to ensure current, neat and tidy prices
Spot check displays to ensure accurate labels are used on prepacks for product, price and sell by dates
Conduct price surveys and ensure prices are competitive on KVI’s
POSWARE updates are maintained on a daily basis
Develop personalized relationships with regular customers
Hygiene & Housekeeping:
Ensure correct chemicals and procedures are used to maintain a sanitized and pest free environment
Ensure the bakery complies with relevant food safety legislation
Conduct spot check to ensure that all display back trolleys, cake fridge and tables are clean and products neatly displayed
All equipment is maintained according to manufacturer’s recommendation and full working order. Full maintenance needed is done before Easter and Christmas
Staff Management:
Ensure the bakery complies with relevant labour legislation (e.g.: safety reps/first aiders)
Training staff on Hygiene, Safety, Product knowledge, Baking skills, Customer service
Planning schedules and annual leave cycles
Daily production meeting with staff each morning
Open & Close the store:
Ensure shrinkage controls are in place
Ensure security procedures are implemented to safeguard store assets and customers
Job Requirements:

2-5 years experience managing a bakery
Previous experience working at a large retail chain
